OK so here's the set up... The Stones went from Between the Buttons (1967) with Let's Spend the Night Together and Ruby Tuesday to Their Satanic Majesties Request (BTW, did it ever occur to anyone that Majesties is plural and not possissive tense?) Then to this. The opening track of Sympathy for the Devil alone shows a major shift. The album continues to go into deep blues and country that would define their next several alblums if not the rest of their carrer. It all pivoted on this album. This was the sound of the new Stones and the beginning of the most brilliant 5 album run of their carrer and maybe of anybody's. It's not a perfect album for sure there are certainly weak spots, but this is some great rock, blues and country music. Most importantly it always seemed to me that this was when the Stones decided to stop trying to be Dylan or the Beatles and just did what the did best.
